Caribbean Style Jerk Chicken Monday Soup

Jerk seasoning is added to the chicken flavoring. Sauteed red pepper, carrot, tomato, onion, green chili and mushrooms are added to the white rice and simmered in a spicy broth. Thyme and garlic are also added to create this regional favorite.
